Salmon Cakes

Combine:

⅓ C plain breadcrumbs

⅓ C panko

⅔ C grated parmesan cheese

¼ C chopped parsley

4 cloves garlic, minced

⅓ C melted butter

Salt and pepper

Combine in separate bowl:

2 beaten eggs

1 can of salmon, bones and all, or the equivalent of fresh salmon, cooked.

½ C shredded parmesan

¼ C bisquick or pancake mix

¼ C finely chopped onions

¼ C finely chopped celery

1 tbsp dried parsley

1 tbsp minced garlic

1 tsp lemon juice

salt and pepper

Heat up your griddle and coat with

avocado oil

Sprinkle bread crumb mixture onto a plate. Scoop ¼ to ⅓ C of salmon mixture onto a plate and shape into a patty, pressing the breading in on all sides. Repeat as necessary.

Set patties to cook on griddle, about 4 minutes per side. Do not fiddle with them while they cook or they will stick.
